This Christmas I decided spread the holiday cheer AND vegan love to my team at work by making them these DIY Hot Cocoa Mixes. Buying for a group can be challenging, but who doesn't love turning on the fireplace and cuddling up with a nice big mug of cocoa, while the snow falls outside? Sign me up! Making the cocoa vegan and sneaking in some extra-healthy ingredients just adds to the loving vibe! Best of all, this mix is super easy to make and assemble - trust me, I am NOT crafty. So channel your inner Martha, and deck those halls!

makes one, 12oz jar of cocoa mix

1/2 cup raw cacao powder
1/2 cup powdered coconut milk
1/2 cup coconut sugar

1 tsp vanilla bean powder
vegan mini marshmallows (Trader Joe's are vegan too!)

additional flavor options
for peanut butter cup cocoa add
3 tablespoons PB Fit, powdered peanut butter
for mexican hot chocolate add
1 tsp cinnamon
1/2 tsp chili powder

for peppermint patty cocoa add
3-5 drops of peppermint extract, depending on desired minty-ness


Full disclosure: for the sake of instagram worthy photos, I layered my ingredients - 1/4 cup each of cacao and powdered coconut milk, then 1/2 cup coconut sugar, followed by another 1/4 cup each of cacao and coconut milk, finally topping off with mini marshmallows. While more visibly appealing, this assembly would be a bit challenging for the cocoa consumer. I would recommend doing the following...

Add all ingredients into a large bowl and whisk together until smooth. Be aware that while the powdered coconut milk is quite lumpy, it dissolves very easily into hot water.

After thoroughly mixing together all the ingredients, pour into a clean, 12oz ball jar (or something comparable). Add a layer of mini marshmallows to fill the remaining space in the jar.

When ready to drink, mix 3 heaping tablespoons of mix into 8oz-ish of very hot water, or non-dairy milk. Stir well to dissolve, top with marshmallows and enjoy!
